Job Description

Candidate has to look after West and Central Region - base at Mumbai office Hotels/ QSR/Specialty Restaurant Chain/Multiplex Chain Key Responsibilities:

  • Product:
  • Enhance Value and Quality Perception, Category wise menu planning and improvement
  • Design menus and continuously make necessary improvements Category wise menu planning and improvement
  • Study Consumer trend and business logic to be made
  • Revenue:
  • Regional F&B Business Forecasting with Regional Director and Head F&B With Regional Director and Head F&B (F&B Sales to be measure through IPH & ASP Growth, without dip in SPH)
  • Region SPH against AOP Weekly / Monthly/ Quarterly/ Annually monitoring and corrective plans
  • Competition Market SPH, Timely analysis of Food & Beverage Prices in relation to competition. The Market share analysis to be done Weekly / Monthly/ Quarterly/ Annually
  • Cost:
  • COGS %, Manage all F&B operations within budgeted guidelines
  • Local Purchase Plan and implement cost effective and high standard products
  • JV COGS %, All local vendors are planned with LOGIC and ROI
  • People:
  • Training, Ensure Cinema teams are well versed with F&B and SOP
  • F&B Team Building, Lead F&B team by attracting, recruiting, training and appraising talented personnel
  • Engagement Activities, Provide a two way communication and nurture an ownership environment with emphasis in motivation and teamwork
  • Customer Service:
  • Audit Based action plan Identify patrons needs and respond proactively. Based on the patron feedback through various channels, plan and execute corrective / improvement action (SMART)
  • Consistency of ensuring adherence to SOPs, Measured on Audit Results
  • Compliance:
  • F&B Licenses & compliances, Ensure all relevant licences are compliances are in place
  • FSSAI, Legal Metrology, FDA & HACCP StandardsAs per SOP guidelines, high and plan corrective steps
  • Initiatives:
  • Update Management with food and beverages trends and best practicesPlan with ROI and Logic to enhance revenue and customer experience
  • Plan Regional F&B team Initiative from each bucket per Quarter (Buckets are Revenue, Cost, & Customer Service), One per quarter
  • F&B Marketing & Digital: Participation and input towards F&B Marketing activities, Ensure all touch points are active
Other Job Specification:
  • Planning and spearheading Region specific menu requirement over and above the base menu in coordination with Regional Chef and Head Culinary.
  • Building F&B culture in cinemas and F&B team by training/updating them of service standards, FSSAI norms, Legal Metrology, Food Safety & Hygiene.
  • PAR and Inventory at cinemas is controlled and monitored every week
  • GRN and invoices are submitted timely and accurately as per SOP
  • Cinema F&B Opex is planned and maintained as per budget in co-ordination with RD
  • Announced and unannounced cinema F&B Audit to be conducted and action plan to be made and completed
Job Competence (Skills):
  • Excellent Planning and Organizing
  • Considerable Experience in F&B -reputed hotel/restaurant/ QSR/cruise
  • Customer Focus both internal & external
  • Knowledge of the Cinema & F&B process and issues
  • Commercial, Analytic, Strategic Vision and Key Input-making ability
  • Technological Orientation: Proficiency in the use of information and communication technology tools.
